DISCLAIMER

This blog is where I record a limited depiction of my feelings, family, and faith. My blog was recently under intense scrutiny, and so I feel this disclaimer is necessary. I try to tell my story as openly as I can, but this blog represents a cropped and narrow-viewed version of my story -- like all social media -- it is NOT the full story. Many events happen behind the scenes that are not recorded or written about, due to the sensitive nature of others involved. Life has many layers. Many layers can be shared and many cannot, and this blog is simply a layer of my life that I allow others to view, but it is not an accurate depiction of all the layers of my life.

A Little Something Sweet

Sometimes you just crave something sweet. At least I do! Actually, I don't just crave sweets sometimes, it is pretty much ALL the time. There is no hiding it, treats are my biggest weakness. (Having self-control is a blog topic for another day!)

Instead of shoving your (my) face full of ice-cream and cookies, there are better options to satisfy that sweet-tooth. Sometimes you just need a little something refreshing and yummy -- something that will not ruin your diligent exercise efforts, and desire to be healthy.

One of my favorite sweet treats are delicious chocolate-covered strawberries. I will not lie and say they are healthy, but they are definitely a better choice (in moderation) than say, a huge bowl full of Tillamook Brown Cow ice-cream. (MooOOOO…)

They are super easy to put together...

First you grab a bag of chocolate chips. (You can use dark chocolate if it makes you feel healthier). Then you can either melt the chocolate in the microwave (be careful not to burn it), or you can do what I do, and melt the chocolate in a bowl over boiling water.

Keep stirring until the chocolate melts...

Then you carefully remove the bowl, and dip your (washed and dried) strawberries into the chocolate.

Place the chocolate-coated berries on a plate, and let the chocolate cool and harden (placing them in the fridge helps cool the chocolate faster). Once the chocolate has hardened, the berries are ready to eat and enjoy. You can be creative and make them as beautiful as you want, adding designs, white chocolate, etc. Or you can just get that chocolate on the berries quickly, so you can eat them up.

They are so simple to make, and so delicious.

Yum! Yum!

For an even "healthier" option, just lightly drizzle the chocolate on the strawberries rather than coating the entire berry.

For a faster (not healthier) option, go buy the container of hardshell chocolate you put on ice-cream -- it works awesome for berries.

Off to the store with you...

Go get your berries and some chocolate!

They are a yummy, super-easy treat to make for the family on Valentine's Day!
